Wine making: Handpicked harvest in cases. Complet destemming. During the fermentation the alcool is added to fortify the wine followed by a three weeks maceration.

Aging : In very filled tank to avoid oxydation. Bottled after two years.

Residual sugars : 94 grs by litter

Comments : The way to age this wine and an early bottling preserve the fruity flavours and insure a slow evolution to more intense notes.

Gastronomy : The concordance with chocolate has been fully accepted but the wine pairs well too with all kind of red fruits prepared as soup or pies. An interesting option could be with hot curries.
