Wine making : Grapes are hand picked at high maturity at the old Les Clares single vineyard. This plot planted in 1949 provides the small and very ripe berries bringing intensity and profundness to this fortified wine.
Macabeo helps in the oxidization process and sweeten the severity of Grenache.
After a classic vinification the wine is first aged in not completely filled tanks for seven years and then aged in old 225 liters casks stored outside and exposed to heat and cold for three years. Casks are filled at the begining and not refilled up. This period increases the oxidisation.
Remarks : 15/10 means October 15 th which is the traditional day when we rack off the wine from the barrels to the cellar for the final blend.
Gastronomy : Due to the aging coditions this wine can still age for many tens years. Flavours of candied oranges with white figs mix with vanilla hints and exotic woods, sweetness (122 grs/liter) unites with sourness to reach the perfect balance .
This wines pairs with quite all kind of desserts and with blue cheeses.
